In a bowl, mix the lemon juice, lemon zest, olive oil, minced garlic, thyme, rosemary, oregano, salt, and pepper
Add the chicken breasts and coat them thoroughly.
Let the chicken marinate for at least 30 minutes, or up to 2 hours for more flavor
Place a large skillet over medium-high heat. Once hot, add a little olive oil to coat the bottom
Add the marinated chicken breasts to the skillet. Cook for 3-4 minutes on each side or until the chicken has a golden-brown crust.
Melt the butter in a heat-proof measuring cup. Add the zest of one lemon and a quarter cup of water. Mix and add to the chicken
As the chicken continues to cook, spoon the butter mixture over the chicken and add the lemon slices to the skillet to cook alongside the chicken
Remove the chicken from the skillet. Garnish with fresh parsley before serving
