Lemon and Herb Skillet Chicken Breast

Ingredients
  

  • 4 boneless, skinless chicken breast
  • 1 lemon (for zest, juice, and slices)
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 2 tbsp butter, melted
  • salt and pepper, to taste
  • fresh parsley, chopped for garnish

Instructions
 

  • In a bowl, mix the lemon juice, lemon zest, olive oil, minced garlic, thyme, rosemary, oregano, salt, and pepper
  • Add the chicken breasts and coat them thoroughly.
  • Let the chicken marinate for at least 30 minutes, or up to 2 hours for more flavor
  • Place a large skillet over medium-high heat. Once hot, add a little olive oil to coat the bottom
  • Add the marinated chicken breasts to the skillet. Cook for 3-4 minutes on each side or until the chicken has a golden-brown crust.
  • Melt the butter in a heat-proof measuring cup. Add the zest of one lemon and a quarter cup of water. Mix and add to the chicken
  • As the chicken continues to cook, spoon the butter mixture over the chicken and add the lemon slices to the skillet to cook alongside the chicken
  • Remove the chicken from the skillet. Garnish with fresh parsley before serving
