Roasted Salmon with Mandolin Potatoes, Peas, and Onions

- olive oil
- 4 portions of salmon
- 1/2 tsp ground garlic
- 4-6 white potatoes, thinly sliced (with a mandolin, if available)
- 12 oz frozen peas
- 1 onion, chopped
- salt and pepper, to taste
Preheat oven to 400.
After slicing the potatoes, layer them on a large baking sheet. Coat with salt, pepper, and olive oil.
Layer the salmon portions on top of the potatoes, and season with olive oil, salt, pepper, and ground garlic.
Bake for 15-20 minutes or until salmon and potatoes are cooked through.
Meanwhile, heat olive oil in a pan. Add chopped onion and season lightly with salt.
Once the onion is translucent, add in frozen peas. Toss thoroughly.
To serve, give each person a layer of potatoes with salmon on top, and a side of peas and onions.
