Roasted Salmon with Mandolin Potatoes, Peas, and Onions

Ingredients
  

  • olive oil
  • 4 portions of salmon
  • 1/2 tsp ground garlic
  • 4-6 white potatoes, thinly sliced (with a mandolin, if available)
  • 12 oz frozen peas
  • 1 onion, chopped
  • salt and pepper, to taste

Instructions
 

  • Preheat oven to 400.
  • After slicing the potatoes, layer them on a large baking sheet. Coat with salt, pepper, and olive oil.
  • Layer the salmon portions on top of the potatoes, and season with olive oil, salt, pepper, and ground garlic.
  • Bake for 15-20 minutes or until salmon and potatoes are cooked through.
  • Meanwhile, heat olive oil in a pan. Add chopped onion and season lightly with salt.
  • Once the onion is translucent, add in frozen peas. Toss thoroughly.
  • To serve, give each person a layer of potatoes with salmon on top, and a side of peas and onions.
