Shrimp Scampi Spaghetti with Zucchini

- 1 lb pasta
- olive oil
- 1 onion, chopped
- 3 cloves garlic, chopped
- 2 medium zucchini, chopped
- 1-2 lbs shrimp, frozen and/or cleaned
- 1/2 cup white wine
- parsley, chopped, for garnish
- grated cheese for serving
- salt and pepper
- lemon, to squeeze over the pasta to taste
Fill a large pot of water to boil for the pasta.
Heat oil in a large skillet over medium heat. Add chopped onion and garlic while the oil is heating through.
Once the garlic and oil are translucent, add in the chopped zucchini. Season with salt and pepper and toss thoroughly. Cover to steam for a few minutes.
Once the zucchini is softened, add in the shrimp. Toss consistently.
Add white wine, cover, and steam for a few minutes.
Meanwhile, boil the pasta. Once done, add the pasta directly to the shrimp and zucchini skillet. Toss well with chopped parsley, additional olive oil, and a squeeze of lemon.
Serve with grated cheese, and enjoy!
