Shrimp Scampi Spaghetti with Zucchini

Ingredients
  

  • 1 lb pasta
  • olive oil
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 2 medium zucchini, chopped
  • 1-2 lbs shrimp, frozen and/or cleaned
  • 1/2 cup white wine
  • parsley, chopped, for garnish
  • grated cheese for serving
  • salt and pepper
  • lemon, to squeeze over the pasta to taste

Instructions
 

  • Fill a large pot of water to boil for the pasta.
  • Heat oil in a large skillet over medium heat. Add chopped onion and garlic while the oil is heating through.
  • Once the garlic and oil are translucent, add in the chopped zucchini. Season with salt and pepper and toss thoroughly. Cover to steam for a few minutes.
  • Once the zucchini is softened, add in the shrimp. Toss consistently.
  • Add white wine, cover, and steam for a few minutes.
  • Meanwhile, boil the pasta. Once done, add the pasta directly to the shrimp and zucchini skillet. Toss well with chopped parsley, additional olive oil, and a squeeze of lemon.
  • Serve with grated cheese, and enjoy!
