Sweet Butternut Squash with Sun-Dried Tomatoes

Ingredients
  

  • olive oil
  • 1 medium butternut squash, chopped
  • 2 sweet onions, chopped
  • 3 garlic cloves, chopped
  • pinch red pepper flakes
  • salt to taste
  • parsley to serve

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add onion and garlic and stir consistently.
  • Once onion and garlic are soft, add chopped butternut squash. Season with salt and red pepper flakes. Toss consistently, and cover to help steam.
  • Once the squash is soft, add the chopped sun-dried tomatoes and toss to warm through. Serve with chopped parsley.
