Cinnamon Swirl Banana Bread with Greek Yogurt

Ingredients
- 4 ripe bananas, mashed
- 1 1/2 cups flour
- 1/2 cup brown sugar
- 1 egg, beaten
- 1 tsp vanilla
- 1/2 cup greek yogurt
- 1 tsp baking soda
- 1/4 cup sugar
- 1 tbsp cinnamon
Instructions
- Preheat oven to 375, with a rack in the middle.
- In a large bowl, mash the bananas well.
- Add the flour, brown sugar, beaten egg, vanilla, Greek yogurt, and baking soda. Mix, mix, mix! Set aside.
- In a small bowl, stir together the white sugar and cinnamon.
- Grease and flour a loaf pan. Add in half the batter.
- Sprinkle half of the cinnamon sugar mixture on top of the batter.
- Add the rest of the batter on top. Sprinkle the last of the cinnamon sugar on top of the batter.
- Place in oven for 50-60 minutes or until cooked through. (Poke a skewer in the middle and it should come out clean!)
