Sweet Potato Mash with Maple Syrup and Chives

Maple Sweet Potato Mash with Chives
Ingredients
- 2-3 sweet potatoes
- 1 tbsp maple syrup
- 1 tbsp olive oil
- 2 tbsp butter
- 1/4 cup milk or cream more or less to your liking
- handful chopped chives
- salt and pepper
Instructions
- Peel and chop sweet potatoes. Boil in salted water until easily mushed with a fork.
- Drain the sweet potatoes, but leave them in the pot.
- Add the olive oil, butter, and milk. Begin to mash the potatoes.
- When thoroughly mashed, add the maple syrup, salt, and pepper to taste.
- Top with chives before serving.
Notes
This is a great side dish to go along with heavier courses, such as meatloaf or a roast chicken. Great for Thanksgiving, Christmas, or any holiday!
