Sweet Potato Mash with Maple Syrup and Chives

Maple Sweet Potato Mash with Chives
- 2-3 sweet potatoes
- 1 tbsp maple syrup
- 1 tbsp olive oil
- 2 tbsp butter
- 1/4 cup milk or cream (more or less to your liking)
- handful chopped chives
- salt and pepper
Peel and chop sweet potatoes. Boil in salted water until easily mushed with a fork.
Drain the sweet potatoes, but leave them in the pot.
Add the olive oil, butter, and milk. Begin to mash the potatoes.
When thoroughly mashed, add the maple syrup, salt, and pepper to taste.
Top with chives before serving.
This is a great side dish to go along with heavier courses, such as meatloaf or a roast chicken. Great for Thanksgiving, Christmas, or any holiday!
