Sweet Butternut Squash with Sun-Dried Tomatoes
Rather than roasting butternut squash, sauté chunks of it in a large skillet with sweet onions. Add a handful of sun-dried tomatoes, and you have a delicious side to go along with any meal.
Sweet Butternut Squash with Sun-Dried Tomatoes
- olive oil
- 1 medium butternut squash, chopped
- 2 sweet onions, chopped
- 3 garlic cloves, chopped
- pinch red pepper flakes
- salt to taste
- parsley to serve
Heat olive oil in a large skillet over medium heat. Add onion and garlic and stir consistently.
Once onion and garlic are soft, add chopped butternut squash. Season with salt and red pepper flakes. Toss consistently, and cover to help steam.
Once the squash is soft, add the chopped sun-dried tomatoes and toss to warm through. Serve with chopped parsley.
