Sweet Butternut Squash with Sun-Dried Tomatoes
Rather than roasting butternut squash, sauté chunks of it in a large skillet with sweet onions. Add a handful of sun-dried tomatoes, and you have a delicious side to go along with any meal.
Sweet Butternut Squash with Sun-Dried Tomatoes
Ingredients
- olive oil
- 1 medium butternut squash, chopped
- 2 sweet onions, chopped
- 3 garlic cloves, chopped
- pinch red pepper flakes
- salt to taste
- parsley to serve
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and garlic and stir consistently.
- Once onion and garlic are soft, add chopped butternut squash. Season with salt and red pepper flakes. Toss consistently, and cover to help steam.
- Once the squash is soft, add the chopped sun-dried tomatoes and toss to warm through. Serve with chopped parsley.
