Mediterranean Vegetable and Fish Soup

Mediterranean Vegetable and Fish Soup
A spice blend make this broth flavorful and delicious!
Ingredients
- olive oil
- 3 cloves garlic, chopped
- 1 onion, diced
- 4-5 small potatoes, diced
- 2 carrots, diced
- 1 green bell pepper, diced
- 1 medium zucchini, diced
- 2 small handfuls green beans, chopped
- 1 28 oz can peeled plum tomatoes, broken up
- 1/2 cup white wine
- 4-6 cups water, or enough to cover
- 1 1/2 tsp ground coriander
- 1 tsp cumin
- 1 tsp crushed red pepper flakes
- 1 tsp turmeric
- 1.2 tsp paprika
- 1 lb shrimp, cleaned
- 1 lb red snapper fillet, or any other firm fish
- salt and pepper to taste
- lemon, for squeezing on top while serving
Instructions
- Heat oil in a large pot, and add the garlic and onion. Salt them a bit to help soften.
- Add all other vegetables to the pot, stirring occasionally as you add.
- Pour in white wine and stir to help release any bits on the bottom. Then, add the rest of the water until vegetables are covered.
- Add in all spices and stir well. Bring to a boil and simmer until all vegetables are cooked.
- Add in the fish and shrimp, and simmer for another 5-10 minutes until the fish is done.
- Serve immediately with a squeeze of lemon, garnish of parsley, and a good chunk of bread!
