Mediterranean Vegetable and Fish Soup
This Mediterranean Vegetable and Fish Soup is a flavorful broth that you can make with whatever you have on hand. Customize it to your liking and make sure you sop it up with some bread!

Mediterranean Vegetable and Fish Soup
A spice blend make this broth flavorful and delicious!
- olive oil
- 3 cloves garlic, chopped
- 1 onion, diced
- 4-5 small potatoes, diced
- 2 carrots, diced
- 1 green bell pepper, diced
- 1 medium zucchini, diced
- 2 small handfuls green beans, chopped
- 1 28 oz can peeled plum tomatoes, broken up
- 1/2 cup white wine
- 4-6 cups water, or enough to cover
- 1 1/2 tsp ground coriander
- 1 tsp cumin
- 1 tsp crushed red pepper flakes
- 1 tsp turmeric
- 1.2 tsp paprika
- 1 lb shrimp, cleaned
- 1 lb red snapper fillet, or any other firm fish
- salt and pepper to taste
- lemon, for squeezing on top while serving
Heat oil in a large pot, and add the garlic and onion. Salt them a bit to help soften.
Add all other vegetables to the pot, stirring occasionally as you add.
Pour in white wine and stir to help release any bits on the bottom. Then, add the rest of the water until vegetables are covered.
Add in all spices and stir well. Bring to a boil and simmer until all vegetables are cooked.
Add in the fish and shrimp, and simmer for another 5-10 minutes until the fish is done.
Serve immediately with a squeeze of lemon, garnish of parsley, and a good chunk of bread!
