Every July 25, the Church celebrates St. James the Apostle, one of Jesus’ first disciples, brother of St. John, and the patron saint of pilgrims. While St. James spent his early life as a humble fisherman along the shores of the Sea of Galilee, his legacy is deepyl connected to the history and culture of Spain. For centuries, pilgrims from around the world have journeyed the Camino de Santiago to venerate his tomb in Santiago de Compostela, where hospitality, shared meals, and simple nourishment have become part of the pilgrimage itself.

Personal Note from My Kitchen

One of the things I love most about celebrating the saints is discovering the stories behind the foods that accompany their feast days. While researching St. James, I found myself drawn to the simplicity of his life as a Galilean fisherman as well as the vibrant traditions that eventually blossomed around his shrine in Spain. Both tell an important part of his story.

As a busy parent, I know feast days often fall on ordinary weekdays filled with work, errands, and dinner that still has to get on the table. That’s why I don’t aim for perfection. Sometimes celebrating a saint is as simple as choosing a recipe inspired by their life, saying a prayer before dinner, and spending a few extra moments together as a family.

Grilled Fish with Hyssop, Olive Oil & Herbs

Before St. James became an apostle, he was a fisherman on the Sea of Galilee. A meal of freshly grilled fish with herbs and olive oil would have been far more familiar than an elaborate feast. This recipe is inspired by the foods that would have been familiar to St. James the Apostle before he left his fishing nets to follow Christ. While no authentic first-century recipe survives, the ingredients—fresh fish, olive oil, herbs, garlic, and coarse salt—would have been common throughout Galilee. Ingredients

  • Whole trout, tilapia, or branzino
  • Olive oil

Instructions

  2. Make the Herb Oil: In a small bowl, combine olive oil, garlic, hyssop (or mint/sage mixture), oregano, thyme, salt, pepper. Stir well.
  3. Season: Rub the herb oil generously over the entire fish, making sure to work some into the cavity and into the scored cuts. Allow the fish to rest for 20–30 minutes while the grill heats.
  4. Grill: Preheat a grill to medium-high heat (about 400°F). Oil the grates well.

    Grill the fish for:

    6–8 minutes per side for smaller fish
    8–10 minutes per side for larger fish

    The skin should become crisp and lightly charred while the flesh flakes easily with a fork.
  5. Finish: Transfer to a serving platter. Drizzle with another tablespoon of olive oil and sprinkle with a little more chopped hyssop and oregano.

To Serve

Arrange the fish on a large platter surrounded by:

  • warm rustic bread
  • bowls of olives
  • sliced cucumbers
  • fresh figs or grapes
  • goat cheese
